Shrimp, Clams, Potato Saute

Start with two tablespoons of olive oil in a hot pan. Then add three tablespoons of butter. When the butter is melted and bubbly add one green onion, a slice of diced green pepper, salt and pepper, pinch of red pepper flakes and a garlic clove diced, and cook till tender. While that is going pre boil some diced potato's till fork tender. When the veggies are tender, add one cup of chicken stock to the pan, bring to a boil and then add one tablespoon of flour. Mix till the four is incorporated. Also grate some lemon rind and squeeze half a lemon (juice) in. When that is done turn the heat down to medium and add your seafood and pre cooked potato's. I use 6 clams and 12 shrimp and one cut up potato. Cook until seafood is done, and clams are open. With a large spoon mix to coat all the ingredients with your broth. Usually takes about 30mins including prep time. This can be cooked with what ever seafood you like.
