My mothers day

My Mothers Day Plans will be a brunch, a fun way I am spending the day. Nothing elaborate, just some easy dish's. They will surely be surprising, and I wanted to share these with you.

My daughter is one of the best cooks I have ever known, I tell her all the time she should go to school to be a chef. It's very rare to find someone who can not only cook, but can bake. So I wanted to share her recipes for mothers day.

The first thing on the menu for the day is Apple Blueberry Corn Muffins. They are easy to make, and they only take about twenty minutes to bake. For this you need to bake your muffins in a 375 degree oven. You will grease a six cup muffin tin. Take two eggs and separate them. You take your egg whites and 1/2 cup of applesauce and mix them into a box of corn muffin mix, a 8 1/2 oz box. To that stir in fresh blueberries about one cup is good. Then it is time to fill your muffin tin. Twenty minutes in the oven and you are done. These taste great with a dollop of whipped cream cheese on top.

For breakfast it's her famous French Toast. With just a few simple ingredients she creates the best French Toast in the world. Taking three eggs and beating them with 1 1/4 cup of milk. Then taking 1 teaspoon of vanilla and 1 teaspoon of cinnamon and mixing it in with the egg mixture. She uses raisin bread to soak up the egg mixture. Then in a cast iron hot pan she Fry's the bread slices until golden brown. Powered sugar is the topper. With freshly made strawberry syrup.

For lunch it will be a salad with citrus and honey mint. She slices up all my favorite fruits, and then drizzle's it with honey. They are placed in a bowl when doing this. Then fresh mint is cut up and placed on top of the fruit mixture. At that time she makes a salad with mixed greens, and places the fruit on top after the fruit has sat for a few minutes to soak in the honey. Then on top of the fruit she sprinkles some blue cheese and chopped walnuts. Yum

To drink she makes me Mango ice tea. And its made with green tea, that's been made from green tea bags and chilled. Then she adds 1/4 cup of fresh cut mango, and a cup of mango juice. To sweeten the tea she uses 2 tablespoons of honey.
