Did you know that there are three types of pasta sauce's to use for your dish's. You should always use the right sauce with the right pasta. Basic sauce is cheese based white sauce, a tomato red sauce and your pesto sauce. The red sauce is hearty, can be chunky and usually rich. It is the sauce most used with meatballs, or other meat. Your white sauce's are usually mild, and your pesto's are on the thin side with herbs of your choice and nuts if desired. When you are making pasta you will choose your sauce according to the type of pasta you are making.
When you want a hearty tomato taste to your dish you will want a red sauce. There are a few to choose from like your Bolognese, good with spaghetti or marinara good also as a dipping sauce. They are both bold and rich in flavor.
White pasta sauce is subtle, creamy and common with Alfredo, or carbonara. There are also white wine sauce's, that you can add your favorite cheese, bacon or herbs to. These type sauces are delicate but yet heavy and filling.
Then you have pesto which is light and can have herbs of your choice. There are also butter sauce's for a fresh taste, that you can also add herbs and garlic to. These sauce's are thin and pure, adding a flavor to your dish with out substance.
You should also choose your sauce according to the shape of the pasta you are using. Thin pasta should be paired with thin sauces, and thick pasta with heavy sauces. If you are using pasta with holes or ridges you should use a chunky sauces. Your chunky tomato sauce goes great with shell pasta, or linguine, or spaghetti pasta. Tomato sauce with meat go great with rigatoni and similar shaped pasta's. Your white sauce pasta will go great with fettuccine, shells or bow tie pasta. Angel hair is another great pasta for thin butter sauces or even a pesto sauce.
So when preparing pasta for dinner, look at the shape and decide which sauce will go best.
